Let It Snow White Cranberry Cosmo

Ingredients: ( for one serving)

  • 1 ½ ounces of your

     favorite Vodka — I love Tito's!!

  • 1 ½ ounces of White Cranberry Juice

  • ½ ounce of Cointreau

  • ½ ounce of fresh squeezed Lime Juice

  • 3 fresh or sugared cranberries on a fun holiday "drink skewer"

 Directions:

**Need a Cocktail Shaker

Fill Cocktail Shaker half with ice

Fill your cocktail glass with ice and let sit for a few minutes (just to chill glass)

In Cocktail Shaker, combine:

    -vodka, cranberry juice, Cointreau and lime juice

    -add more ice

Cover Cocktail Shaker and shake, shake, shake what your mama gave you!

When the Cocktail Shaker is "icy" stop shaking.

Strain into Martini Glass preferred but a whiskey high ball is fine too.

Garnish with you a drink skewer by placing 3 cranberries on skewer and a sprig of Rosemary if you'd like is also a nice touch.

 

**If you'd like to use Sugared Cranberries - prep beforehand

-1 cup of fresh cranberries

-3/4 water

-1 ¼ granulated sugar

 

Place cranberries in a heat safe bowl.

In medium saucepan, bring water and ¾ cup sugar to a simmer.  Whisk until all sugar is dissolved and remove from heat.  

Let cool for 5 minutes

Pour sugar syrup over cranberries, cover and set aside for 15-20 minutes

Line a baking sheet with parchment paper and slot the cranberries from sugar syrup to baking sheet- let rest at room temp for 1 hour.

Add remaining sugar into large bowl and toss the cranberries into bowl...getting them well coated.

Return sugared cranberries to baking sheet - let rest for another 1 hour.  OR set them in a glass container and store them in freezer.

Spiced Pecans

Ingredients: ( for 4 cups)

  • 4 cups pecan halves (approx. 12 oz.)

  • 1/4 tsp cayenne

  • 4 tsp salt

  • 1 tsp white pepper, ground

  • 1 tsp nutmeg, ground

  • 1 tsp cloves, ground

  • 1 tsp allspice, ground 

  • 1/4 cup butter, unsalted, melted

  • 1/2 cup maple syrup


Directions:

Pre-heat oven to 350°F.Place pecans in a medium mixing bowl. Melt butter in the microwave in a small bowl, then add the salt, cayenne, white pepper, nutmeg, cloves and allspice, and whisk to combine. Drizzle the spiced butter over the pecans and toss to coat evenly. Transfer coated pecans to a rimmed baking pan lined with a silicon baking mat,  spreading evenly into a single layer. Bake about 9- 10 minutes, stirring at 5 minutes, until pecans are lightly toasted.  Remove from oven and drizzle the maple syrup over the pecans, stirring to combine. Then, bake about an additional 10 minutes. Pecans should be slightly dark and glossy when finished. Cool in the baking pan, on a wire cooling rack for 25- 30 minutes. Transfer nuts to an airtight container. 

 

*Great to serve with holiday cocktails, sparkling wine or package and give as gifts.
